These no bake coconut pecan energy bites are delicious and easy for a quick and healthy snack. Additionally, they are vegan, vegetarian and gluten free. The best part: they’re easy to make!
You guys, energy bites are SO versatile! You can add or subtract many of the ingredients, or create your own concoction altogether. I find this recipe is a good base to add in extra ingredients such as dried fruits or nuts.
i like to eat these for a mid-day snack or with lunch. They are so healthy because there are NO added sugars. (Use a natural peanut butter with no sugar for an even healthier twist!)
I’ve been making these on the weekend and eating them throughout the week. With that being said, it’s so simple to just make the energy bites in batches and keep them in the freezer until ready to eat.
You can shape them however you like. I’ve made them into granola bars before, however, I find that the energy balls are easier to keep from crumbling.
A couple things to note:
•Use Parchment paper to avoid peanut butter sticking on the pan
•Any bowl is fine, however, I like these bowls because they have grips on the bottom
•When mixing the peanut butter, you may need more or less depending on your consistency
These are perfect for a road trip or plane ride too! Just put a couple in a ziplock bag, making it easy to travel with. You may want to check out my Top Carry On Essentials post to see what else I recommend for traveling.
Anyways, you really can’t mess these things up. If something isn’t working out, simply change it! They’re so forgiving.

Coconut Pecan Energy Balls
Ingredients
- 1 1/2 Cup Rolled Oats
- 1/2 Cup Pecans
- 1/2 Cup Coconut Flakes
- 1/4 Cup Chia Seeds
- 3/4 Cup Peanut Butter
- 1 tbsp Honey
- 1/4 Cup Flax Seeds Optional
Instructions
- In a medium sized bowl, combine all ingredients. Stir well, making sure the peanut butter is evenly incorporated.
- Roll mixture into balls and place on a pan with parchment paper. Freeze for at least 15-20 minutes.
