It’s a fun and creative way to incorporate healthy fat (avocado) while kids also get to munch on their favorite fruits! Sounds like a winner breakfast or snack idea to me!
To make the rainbow, you can substitute for different fruits if you don’t have certain ones on hand. I didn’t have purple grapes or blueberries so I used blackberries to act as the blue and purple portion of the rainbow. I also made a version with apple slices and raspberries. Just be creative with what you have!
For an extra treat, add some whipped cream or marshmallows as clouds!
This toast is so colorful and fun for kids to make! Serve it on St. Patrick’s Day or any time of the year… rainbows never go out of season!
Rainbow Fruit Toast Ingredients:
- 1 Slice of toast
- 1/2 Avocado spread
- Red fruit: raspberries, strawberries, chopped apples
- Orange fruit: orange slices, peaches
- Yellow fruit: bananas, pineapple
- Green fruit: green grapes, kiwi
- Blue fruit: blueberries, blackberries
- Purple fruit: purple grapes
How to Make Rainbow Fruit Avocado Toast:
- Spread the mashed avocado on your slice of toast.
- Layer toast with fruit in the pattern of a rainbow: red, orange, yellow, green, blue, and purple.
- Serve and enjoy!

Rainbow Fruit Avocado Toast
Ingredients
- 1/2 Avocado
- 1 Whole grain slice of bread toasted
- 6 Raspberries
- 1 Mandarin orange peeled and divided
- 1/2 Banana sliced
- 4 Green grapes
- 4 Blackberries
- 2 Large Marshmallows or whipped cream
Instructions
- Spread the mashed avocado on your slice of toast.
- Layer toast with fruit in the pattern of a rainbow: red, orange, yellow, green, blue, and purple. Add two large marshmallows or whipped cream for the clouds.
- Serve and enjoy!
