It’s finally Girl Scout cookie season! Being that thin mints are a seasonal cookie, I thought I would share a homemade Thin Mint recipe with you so you can enjoy these all year long! This recipe also comes in handy when you devoured the last girl scout cookie and need to make more. 😉
This recipe is much like the original Thin Mint recipe that we all love. It’s minty, vegan, and has a nice crunch. But there’s one component that differs… this recipe is way healthier!
You can feel good about eating a few of these cookies since they don’t have all the added sugars and questionable ingredients.
Copycat Thin Mint Recipe
It only takes 3 simple ingredients to make these thin mints: dark chocolate, crackers, and peppermint extract. I used dark chocolate for a dairy-free version, but you can use milk chocolate if you prefer.
My favorite way to enjoy these thin mints is by storing them in the freezer. The cold and minty combo blends together beautifully.
How to Make Copycat Girl Scout Thin Mints
Ingredients:
- 12 Oz dark chocolate chips
- 24 Crackers
- 1 Tsp peppermint extract
Directions:
- Begin by melting your chocolate chips in the microwave using 30-second intervals and stirring frequently until smooth.
- Once the chocolate is completely melted, stir in the peppermint extract.
- Using a fork for easy handling, dip the crackers in the melted chocolate and shake off the excess. Place each dipped cracker on a baking tray lined with parchment paper.
- Place the baking tray in the freezer and allow chocolate to set for at least 20 minutes.
- Remove the crackers from the freezer and repeat the dipping process. Allow chocolate to completely set.
How to Store Copycat Thin Mints
You can keep these Thin Mints in an airtight container for up to 1 week. Or, properly store them in the freezer for up to 1 month.
