Copycat Thin Mints
These Copycat Thin Mints are a tasty Girl Scout cookie and healthier alternative to traditional thin mints!
- 24 Crackers
- 12 Oz dark chocolate chips (or milk chocolate)
- 1 Tsp peppermint extract
Begin by melting your chocolate chips in the microwave using 30-second intervals and stirring frequently until smooth.
Once the chocolate is completely melted, stir in the peppermint extract.
Using a fork for easy handling, dip the crackers in the melted chocolate and shake off the excess. Place each dipped cracker on a baking tray lined with parchment paper.
Place the baking tray in the freezer and allow chocolate to set for at least 20 minutes.
Remove the crackers from the freezer and repeat the dipping process. Allow chocolate to completely set.
